Why is salt water used in sesame processing?

More effective cleaning and to make hull separation easier

Salt water (brine) is used in sesame processing to ensure more effective cleaning and to make hull separation easier after the dehulling process.

The first stage of hull separation and cleaning begins by transferring the sesame seeds into the first brine tank. The salt concentration in the first tank is lower compared to the second tank. Sesame seeds are kept in this tank for a short period. During this stage, sesame hulls and possible impurities are separated and removed.

Afterwards, the sesame seeds are transferred into the second brine tank, which has a higher salt concentration. The seeds are held again in this tank to achieve complete cleaning and efficient hull separation.

The main advantages of using salt water are:

  • Improves hull separation: Due to the increased density of salt water, hulls and light impurities float more easily, allowing the sesame kernels to separate efficiently.

  • Provides effective cleaning by flotation: Empty, damaged, or lightweight seeds and hull particles rise to the surface and can be removed easily.

  • Increases dehulling efficiency: The hull loosens more easily, resulting in better performance during the dehulling process.

  • Enhances color and quality: Better hull removal gives sesame seeds a cleaner, whiter, and more uniform appearance, which is especially important for tahini-grade sesame.

  • Helps remove foreign materials: Dust, straw, and other light contaminants can be separated more effectively.

Do sesame seeds remain salty after this process?

Absolutely not. Sesame seeds must not remain salty after passing through brine tanks. Otherwise, the natural taste may be negatively affected and the product quality may decrease.

To prevent this, sesame seeds are thoroughly rinsed and washed at least five times after the brining process in order to completely remove salt residues.

The water used for washing must be:

  • potable (drinkable) quality,

  • sourced from a clean and reliable water supply,

  • with a proper pH balance,

  • and continuously renewed / not stagnant.

This washing stage ensures that the sesame seeds are completely clean, free from salt residues, and retain their natural flavor.
